minute ready to serve riceI know as a mom things are always pretty much hectic. Always. I don’t always have time to make everything from scratch (not even close). I love to try recipes but I defienetly do not have the time to be making fully from scratch meals every day of the week. That’s why it is always nice to have a quick, easy product that I can depend on. Minute Ready to Serve Rice is just that. It is super convenient and not to mention a healthy option for my family.

Last week before heading off to my grandmother’s 80th birthday party I decided to make a fairly easy meal for my family. I made a whole lemon chicken, Parmesan and herb potato slices, and Brown & Wild Minute Ready to Serve Rice.
minute rice, lemon chicken, potato slices
The lemon chicken was sprinkled with salt, pepper, and other spices inside and out. Stuffed with lemon and a little bit of white cooking wine. Butter was placed underneath the skin over the breasts and thin lemon slices were placed on top of the chicken. It turned out delicious and my big bug just couldn’t get enough of it. That’s saying a lot considering I never know what he will eat. One day he loves something and another it’s “Eww, What’s that!?”. The potato slices were tossed in olive oil and spices and sprinkled with Parmesan cheese. They turned out awesome as well!

The most convenient thing I made was the Minute Ready to Serve Rice. I just popped two of the containers in the microwave and in less than 2 minutes they were done. That’s my kind of cooking! I just poured the rice into a bowl and it was ready to serve. I can’t wait to try all of the other flavors. Too bad kids can’t use a microwave at school because I’d be sending this with my big bug if they did. It’s so much heathier than most options.

Minute Rice is a great thing to have on hand for those crazy weeknights. I love brown rice and love that it is so fast compared to from scratch. 🙂
