Garlic Chicken Diane
A delicious chicken dish with just the right amount of tang. Compliments rice or noodles well!
boneless skinless chicken breasts
fresh minced parsley
white cooking wine
chopped green onion
fresh minced garlic
Preheat oven to 400 degrees F. Grease a glass baking dish and set aside. Season chicken with dried parsley, salt, and pepper.
In a large skillet, heat the butter and oil over medium heat. Brown the chicken on both sides. Cover and bake the chicken in the oven for 20-25 minutes or until a meat thermometer reaches 170 degrees.
In the same skillet, add in the lemon juice, garlic, mustard, and parsley; blend well. Whisk in the broth, wine, and green onions; heat through. Pour over cooked chicken. Enjoy!
