Not that long ago I made the best oatmeal cookies. They were oatmeal cookies but had the texture of those super soft chocolate chip cookies everyone loves.
I know they were a winner because even my picky husband loved them and he hates oatmeal cookies. The problem is I was stupid and wasn't writing the recipe down as I went. I am SO mad at myself!
These guys are pretty close but I still might make a future tweak to the recipe.
This recipe uses Swerve — a sugar replacement that has low calories, low carbs (3-4 per serving), and measures just like sugar. It is made from fruits and starchy root vegetables and with no added extras — so it's very natural.
Cookies already have a bad rap so you might as well use sugar replacements like Swerve to lower some of those bad counts down. Can't hurt, right?
How to Make the Best Oatmeal Cookies
The Best Oatmeal Cookies without Raisins (Super Soft and Delicious!)
Incredibly soft — we dare say they are the best oatmeal cookies. Packed with grounded oats and M&M's and so easy to make!
Ingredients
- 3/4 cup butter softened
- 3/4 cup Brown Swerve
- 1/4 cup Swerve Granular
- 1 egg
- 2 tsp vanilla extract
- 1 1/4 cups old fashioned rolled oats grounded
- 1 cup all purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 3/4 cup mini M&M's
Instructions
Preheat over to 350 degrees. Microwave butter for 35 seconds.
Add all dry ingredients (except M&M's) to a large bowl and whisk until thoroughly combined.
In a large bowl, cream butter and sugars until creamy and smooth; about 1-2 minutes. Beat in egg and vanilla for 15 seconds. Scrap down sides as needed.
Add dry mixture to wet mixture and mix until crumbles form. Press together using your hands until a dough forms. Add M&M's and incorporate with your hands.
Roll dough into 16-20 balls and place on a cookie sheet. Bake for 9-11 minutes. Let cool for 30 minutes on the pan. Enjoy!
