Is there any better way to celebrate National Ice Cream month than with a cake from I Love Ice Cream Cakes? My family loves ice cream cakes any day of the year, but this month, we especially love them because we can celebrate ALL month long.

I know Halloween is a ways off but I just HAD TO go with a horror theme for this recipe. During June, we had our nieces stay with us the whole month. It was the first time I had seen them since moving from Kentucky three years ago. Needless to say, we had A LOT of catching up to do.

Traditionally, when they spent the night with us in the past we’d go on movie marathons, but now since they are older we got to indulge in horror movies for the first time. Yes. FINALLY! It’s always so hard to watch those kinds of movies with little kids. Okay, it doesn’t happen unless you think Casper is scary. They are often inappropriate and way too disturbing for youngins but for teenagers it becomes fun.

I decided to keep the fun going even after they went home by making this cake.

Have you ever had an ice cream cake? It is so delicious, but you need to be careful so it doesn’t melt everywhere. Keep it frozen until you’re ready to eat it. When your friends and family are done enjoying it, make sure you stick it back in the freezer. It is total ice cream deliciousness, in the form of a cake.

Another tip for enjoying an ice cream cake is to let the cake sit out for a few minutes before enjoying. Sometimes ice cream cakes harden up pretty good in the freezer, which means they need a few minutes to thaw.

One thing you need to do right now, for National Ice Cream Month, is to enjoy an ice cream cake. You can enjoy an ice cream cake for a special occasion or just for the fun of it.

Bloody Good Ice Cream Cake

Ingredients
Sugar Glass
  • 2 cups water
  • 1 cup corn syrup light
  • 3.5 cups sugar white
  • 1 tsp cream of tartar
Edible Blood
  • 1/2 cup corn syrup light
  • 1 tbsp cornstarch
  • food coloring red and blue
  • water
Red Chocolate Ganache
  • 1/2 cup heavy cream
  • 1.5 cups white chocolate chips
  • red gel food coloring
  • store bought ice cream cake
Servings: slices
Instructions
Sugar Glass
  1. In a medium saucepan, thoroughly mix all ingredients together and bring to a boil. Continue to boil until a candy thermometer reads 300 degrees.
  2. As soon as the temperature reads 300 degrees, quickly pour the mixture onto a metal baking sheet. Let cool completely and break into shards.
Red Chocolate Ganache
  1. In a heat proof bowl, heat cream for 45-60 secs or until bubbling. Pour chocolate chips into cream; immersing completely. Let sit for 2 minutes.

  2. Stir until combined. Heat again for 20 seconds (repeatedly if necessary) until all chips are melted and smooth. Add gel food coloring until a nice blood red color is achieved.
Edible Blood
  1. In a small bowl, mix cornstarch and corn syrup together. Slowly add water until the consistency of blood is reached. Add food coloring until it is the color of blood.
Decorating The Ice Cream Cake
  1. There is really no right or wrong way to decorate this cake. I started with the ganache but you can go to town on this any way you want as long as it is BLOODY GOOD!
