For a while, I have been wanting to make popovers — a popover pan has been staring at me from inside my cabinet for over a year. I finally decided it was time to whip it out, but sadly they failed. They didn’t pop, instead, they sunk and formed a perfect stuffing indent.
SO I scrapped the popover idea and decided to make Cream Cheese Stuffed French Toast Yorkshire Pudding instead.
These taste remarkably similar to french toast but are in a convenient handheld form. The outside is nice and crisp while the inside is a souffle-like texture — it’s amazing!
This isn’t just any stuffed french toast concoction, though — this recipe actually contains a scoop of Superfood Protein.
Superfood Protein is a convenient all-in-one nutritional shake which contains an organic blend of plant-based proteins, greens, fiber, healthy fats, vitamins, minerals, and digestive enzymes.
That means with every delicious bite, you are getting some healthy stuff too. Not too shabby for a delicious stuffed french toast breakfast treat!
Cream Cheese Stuffed French Toast Yorkshire Pudding
Cream Cheese Stuffed French Toast Yorkshire Pudding

Ingredients
Yorkshire Pudding Batter
- 3 eggs room temperature
- 1 cup milk room temperature
- 2 tbsp brown sugar
- 1 tsp ground cinnamon
- 1/2 tsp salt
- 2 tsp vanilla extract
- 1 cup all-purpose flour
- 1 scoop Plant-Based SuperFood Protein (Vanilla) about 15 grams
- 3 tbsp butter melted
Cream Cheese Stuffing
- 2 oz cream cheese softened
- 1/4 cup powdered sugar
- 2 tbsp milk
Instructions

Preheat the oven to 400 degrees F. Place a 6 cup popover pan on the middle rack while it's preheating.

Using a blender, mix the eggs, sugar, spices, milk, and vanilla on medium speed. Add in flour and protein powder; blend until smooth.

Remove the popover pan from the oven and using a pastry brush grease each tin with the melted butter until gone.

Evenly distribute the batter between the cups. Bake for 20 minutes, keeping the door shut. Turn off the oven, still keeping the door shut, and continue to bake for another 10 minutes or until golden brown.

While the pudding is baking, whisk together the cream cheese, powdered sugar, and milk until smooth.

Remove the pudding from the oven and stuff each one with the cream cheese filling. Serve warm and enjoy!
In this recipe, we used half a serving size of Vanilla Superfood Protein by Ground-Based Nutrition.
So instead of the normal 20 grams of multi-source organic plant-based protein per serving, each one of these puddings has an additional 1.6 grams of protein (10 grams total if you were to devour them all yourself — which is totally possible with how yummy they are!).
