Air Fryers are the next big thing — well at least they should be. People don't give them enough credit. Usually, when I am browsing around Pinterest I keep seeing recipes pop up about multi-purpose cookers like the Instant Pot. It's popular because you can use it to cook a variety of things in different ways — pressure cook, slow cook to sauteing to cooking eggs and whatever else you fancy. It does a lot.
What people don't realize is that an air fryer can do a lot too — way more than just ‘frying' foods. It can also grill, bake, and roast foods. Think of it as a mini convection oven. I think it is AMAZING.
Essentially the way an air fryer cooks food is by quickly blowing hot air around. Pretty neat, huh? The result is a more even cooking because it heats food in all directions.
GoWISE USA Air Fryer For Making Crustless Cheesecake
Recently, I received a 5.8-Quart XL Digital Touchscreen Air Fryer from GoWISE USA. My first impression was wow — it's super sleek and futuristic looking. As I powered it on, it had me feeling like I was getting ready to shoot off into space with its gentle humming sound.

I was a bit ignorant at first and thought the preprogrammed time of 15 minutes was a preheating session. It's not — just select your temperature AND time and press power to get things going. NO, preheat needed — but it doesn't hurt to warm it up to your desired temperature while prepping!
During Halloween, we roasted pumpkin seeds in our new air fryer and they turned out delicious. However, for my first real experiment, I wanted to make something people might not know they can make in an air fryer — crustless cheesecake.
Low Carb Air Fryer Cheesecake
Not any crustless cheesecake, though — a low carb crustless cheesecake. My husband and I have been trying to eat lower carb recently. That means a lot of our favorite foods are a no-go.
So to make this cheesecake more low carb friendly, I nixed the crust and used zero calorie sweetener. Let me tell you — I didn't miss a thing!
Yes, you could totally make a low carb crust to go with this cheesecake as well, but that takes more time — and I wasn't feeling very patient.
Generally, cream cheese and sour cream are Keto friendly which is what the majority of this delicious crustless cheesecake is made of. SCORE!
Best part — this Low Carb Crustless Cheesecake can be made relatively quick (10 minutes in an air fryer) versus nearly an hour in a regular oven with a crust.
Not to mention, generally, cheesecakes need to cool overnight in the refrigerator so the less cooking time the better!
I did not cover my two springform pans in foil — I wanted a nice golden top. That way when it's cooled, I can flip it upside and give the illusion of a crust 😉

A Super Easy Low Carb Crustless Cheesecake Made in an Air Fryer!!
Low Carb Crustless Cheesecake
A super easy, crust-less cheesecake — with all the flavor you love without the carbs. Made quickly using a blender and a GoWISE USA Air Fryer so you can spend more time eating and less time waiting!
Ingredients
- 16 oz cream cheese softened to room temperature
- 3/4 cup zero calorie sweetener make sure it measures the same as sugar
- 2 eggs
- 1 tsp vanilla extract
- 1/2 tsp lemon juice
- 2 tbsp sour cream
Instructions
Preheat the air fryer to 350 degrees.
In a blender, mix together the eggs, sweetener, vanilla, and lemon juice until smooth. Add in the sour cream and cream cheese and blend until lump free and silky. The more you whip it, the creamier it will be.
Pour batter into two 4-inch springform pans and cook for 8-10 minutes or until set.
Allow to cool completely in the springform pan. Refrigerator overnight, or for at least for 2-3 hours. Enjoy!
