A quick, hearty lentil soup made easy in an electric pressure cooker. Yummy salsa gives this recipe a nice southwestern spin!
One of my favorite childhood foods was lentil soup. I don't know exactly what my mother put in it but it was amazing. She must have added her own flare to it being Hispanic—she liked to do that with recipes.
Then when we had leftover lentil soup she'd drain it and refry the beans for breakfast tacos. It was delicious!
Since I don't have the original lentil soup recipe I decided to try my hand at my own. I have to say it turned out pretty good thanks to Mrs. Renfro's Salsa.

I love how each one has simple, real ingredients I can pronounce. You know — things like tomatoes, water, onions. cilantro, jalapenos.
They even often include a yummy recipe right on the jar! I got recipes for cheese salsa dip, tortilla roll-ups, Zesty Fish Dish, and Roasted Salsa Meatloaf. I haven't tried these yet but I so want to!
But the Chipotle Corn Salsa was a hit at my Christmas potluck!
Pressure Cooker Southwest Lentil Soup with Bacon
To give my lentil soup that little bit of southwestern flare I love I used Mrs. Renfro's Roasted Salsa. I wanted it to have a smokiness to it — this worked beautifully. It really adds a richness and depth to the flavor profile. LOVE!
I use bacon in this recipe but any kind of smoked sausage works really well too.
You'll love this easy lentil soup recipe. The pressure cooker makes it SO simple and QUICK!
I suggest topping it with shredded cheese. YUM!
Pressure Cooker Southwest Lentil Soup with Bacon
A quick, hearty soup made easy in an electric pressure cooker. Yummy salsa gives this recipe a nice southwestern spin!
Ingredients
- 4 slices bacon chopped
- 4 ribs celery diced
- 1 small onion diced
- 1 cup baby carrots diced
- 3 cloves garlic minced
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp celery salt
- 1 lb lentils rinsed and drained
- 6 cups chicken broth
- 16 oz Mrs. Renfro's Roasted Salsa
Instructions
Set pressure cooker to the saute function and let preheat.
Saute bacon, onions, carrots, garlic, celery, and spices, for 7-10 minutes, or until onions are translucent and veggies are soft.
Add in all remaining ingredients and stir to combine.
Lock lid and set to high pressure and make sure the steam release valve is sealed. It will take 13-15 minutes for it to reach pressure.
Once pressure is reached, cook for three minutes and then press the stop button.
Use the quick pressure release method to release the pressure. This can take 10-20 minutes.
Add a touch of water or broth if you want to adjust soup consistency. Season to taste with salt and pepper. Garnish with parsley and serve with bread. Enjoy!
I think the recipe tastes even better the next day (if that's possible). Plus it freezes really well! This lentil soup makes for a great protein packed, ready to go meal when frozen 😉
I like to freeze mine in large ice cube trays and then vacuum seal them with my FoodSaver. Similar to what I did with the sauce for my Apple Cider Smothered Stuffed Pork Chops 😉

I had never made my own lentil soup but I have ordered it from Amazon…it was quite good. But because it was canned I know preparing it homemade is much better.With all the spices I know this will be amazing!

I like lentils, cheap and easy to make. Some need soaking, but it’s quite healthy.. and also interesting to add bacon, adds so much flavour. I never tried
Bacon is a must IMO. It really adds to the flavor profile.

I can take or leave lentils but since recently going Keto, I tend to leave them. The ingredients in your recipe do sound yummy though! I don’t have a pressure cooker or even a slow cooker/crock pot but have wanting to get a slow cooker/crockpot and intend to as soon as I can! I’m the only person my age that I know that has never had one.
I understand. I dabble in keto too sometimes. You def need to add some more to your kitchen gadget collection. They are so helpful.

Lentils are pretty yummy and this pressure cooker makes it so easy.
I like lentiles, but rarely think to order the soup or cook with the ingredient. I mainly stick to Sausage and Tortellini soup or chicken noodle soup.

Hmm salsa in soup, that would put a little of a zing in the soup wouldn’t it? I think I am going to try this recipe only I know we don’t have that salsa in Canada but the recipe looks good.

You have to think salsa is mainly tomatoes, onions, spices, and a few peppers depending on how hot you like it. It blends very well into the soup.
I love lentils. It is a staple in my home. I especially like to mix red and brown lentils together. Black lentils are good on top of salad. They are packed with fiber and protein to keep me full.

I’ve tried lentils at least once, but I’ve forgotten the taste. I don’t have a favorite soup, but one soup I enjoy is clam chowder.
I like clam chowder sometimes, as long as it isn’t too fishy.

I’m not a big fan of lentils, but I do love soup. My favorites are taco soup and tonight I am making chicken tortellini soup. yum yum.
What is taco soup? Like a tortilla soup? Chicken tortellini soup sounds amazing. Do you have a recipe?
Yes, the taco soup is kind of similar to a tortilla soup, but with ground beef instead of chicken. I actually made some last night after thinking about this post. lol. It’s ground beef with corn, rotel, black beans, and kidney beans (some people use different types of beans, but those are my preferred ones) and then a packet of taco seasoning and a packet of ranch dressing mix mixed in the broth.
The chicken tortellini is really good. I make it in my instant pot. You saute a diced onion and minced garlic in a little olive oil first. Then add in a box of chicken broth, 2 tbsp tomato paste a can of diced tomatoes, 1tbsp dried basil, salt and pepper. GIve that a stir and then put in a couple of chicken breast. Close up the pot and cook on high pressure 15 minutes. When it’s done do a quick release. Take out the chicken and shred/chunk it up into bite sizes. While you are doing that go ahead and put the pot back on saute function and drop in a bag of frozen cheese tortellini so it can be heating. Then stir the chicken back in and add a little half and half or cream. Once the tortellini are cooked through its ready. You can also add in spinach when you put in the tortellini if you like. I also usually top my bowl off with a little parmesan cheese. This is my favorite IP recipe.

Lentil soup is something that I have always missed the mark with. I always seem to make it really mussy somehow. I’ll have to have a go with the slowcooker and see if it comes out any better.
