My boys go back to school in 10 short days. This will be the first school year we will have two kids needing lunch at school. Most years we are really good at packing lunch for the first half of the year but once January comes we really slack. REALLY badly!

We just seem to get lazier as the school year progresses. Or maybe winter break just gets us really off our game. We can’t do that this year though with two of them in school. While school lunches are only a few bucks, a few bucks every day really adds up!

We much prefer to pack school lunches for them that way we save money and know exactly what they are eating. Our youngest is really picky anyway so he’d probably never eat if we didn’t pack him food.  I made versions of the No Bake Energy Bites and the Fruit Bars and tested them out with my boys. I have to say the recipes were easy and fun to make and my boys couldn’t get enough of Shamrock Farms mmmmilk.

Chocolate Chip Coconut Bites

Ingredients

• ½ cup chocolate chips
• 1 cup sweetened coconut
• 1 teaspoon vanilla extract
• ½ cup peanut butter
• 1 cup old fashioned oats

 

Directions

Pour all ingredients into medium size bowl. Stir ingredients until combined. Roll into balls. Refrigerate until firm and then enjoy with Shamrock Farms mmmmilk!

Peanut Butter Cereal Bars

Ingredients

• 1/2 cup honey
• 1/2 cup peanut butter
• ½ tsp ground cinnamon
• 3 cups honey nut cheerios

Directions

In a sauce pan over medium heat, stir peanut butter, honey and cinnamon together for 2-3 minutes. Pour mixture over cereal and stir.

Spread cereal mixture into baking dish. Refrigerate until firm (about 1 hour). Cut into bars and serve, enjoy with Shamrock Farms mmmmilk!
