We don't always have the time to spend hours in the kitchen baking. We have errands to run, work to do, and maybe even a few minutes to relax (If we are lucky!). That's why this St. Patrick's Day I decided to take the easy way out and make no bake cookies. They are super simple to make with only three ingredients most of which you probably have on hand.
The best part is that these are Oreo cookies. Come on, who doesn't love Oreos!? It's one of my families favorite flavor for cakes, cookies, and ice cream. It's a classic in my book. These St. Patrick's Day cookies were a hit in my house!
St. Patrick's Day No Bake Cookies
- 24 oreos crushed
- 5 oz cream cheese softened
- green sprinkles
- Place the Oreos in a plastic bag and crush until fine. Pour into a medium sized bowl.
- Combine crushed Oreos and cream cheese. Knead together by hand until a dough forms.
- Flatten the dough to about half an inch thick on a non-stick surface that is movable. I used a baking mat in a pan as mine. Place in freezer for 15-30 minutes.
- Cut out shamrocks with a cookie cutter. Continue to flatten, freeze, and cut any dough scraps until all of the dough is gone. You know like what you do with play-doh. Sprinkle on green sprinkles. Enjoy!
Store in airtight container in a cool place. I like to keep mine in the freezer so they keep their shape.
How do you celebrate St. Patrick's Day?

This is genius! I LOVE how simple it is, I can’t wait to try it. It would also make a decadent pie crust!

Making this into a pie crust sounds like a fabulous idea. My husband would love a pudding pie in it!
No bake recipes are the best! I normally don’t celebrate St. Patrick’s Day, but I’m considering on doing so with this recipe. Thanks for sharing!
If it’s no bake, it’s for me! I haven’t had time to make cookies from scratch in a LONG time so this looks like a great alternative.
The freezing part can take some time but it’s one of those things you can do over several days if you want.
What a great idea for a cookie. I love the quick and easy recipes and who doesn’t love oreos. Very fastive
I love anything green on St. Patty’s Day! And especially if it involves OREOS. Yum1
Oreos are the best aren’t they 🙂 I just LOVE them!
I am not big on the traditional no-bake cookies, but these I can definitely get behind! I will have to try them out!
You should try these. I’m not a huge fan of the regular ones either but Oreos make everything better 🙂
These sound amazing! I love making no bake cookies because they save a lot of time.

ooo these look delish and would be perfect party food since they are no bake! I love the cut out as well might need to get one !!
Your recipe is so pretty and looks delicious too. I wish oreos were gluten free 🙂
I am surprised that haven’t figured out a way to make them that way. I bet there will be a gluten-free version before long.
These cookies look almost too pretty to eat. I love all things shamrock themed.
There is absolutely nothing I don’t love about an easy, no-bake cookie recipe. These will be great for an upcoming event I have to go to for my husband’s work 🙂 Thanks for sharing!
This is a brilliant idea and the recipe is so easy to follow! Thank you for sharing with us
I have to say this recipe is absolutely clever! Who would have thought of using crushed Oreos and making a dough out of it! Fabulous! Now I know what to do if I run out of time and I need a Shamrock recipe! Thanks for the recipe!
It really is amazing how it turns right into a dough. I felt like I was playing with play-doh 🙂 SO fun and yummy!
