- One box of XO Baking Co. Gluten Free Brownie Mix
- 2/3 cup mashed sweet potatoes
- 1/2 cup unsalted vegan butter, melted
- One tablespoon water
- Two teaspoons of vanilla extract
Mint Frosting Layer
- 1/2 cup unsalted vegan butter, softened
- 2 cups powdered sugar
- Two tablespoons of coconut milk
- 1.5 teaspoons peppermint extract
- gel green food coloring
Vegan Chocolate Layer
- 12 oz vegan chocolate chips
- 1 ¼ cups chilled canned unsweetened coconut cream, separated cream part only

Cooking instructions for these tasty vegan gluten free brownies
Step 1
Heat the oven to 350 degrees, adjust the rack to the lower third of the oven, and grease a 9″ square pan.
Step 2
In a large bowl or stand mixer, beat the sweet potato egg replacer, vanilla, water, and melted butter, until blended. Add in the brownie mix and beat until smooth. Spread evenly in the pan. Bake for 28-32 minutes, or until a toothpick comes out nearly clean.
Place the pan on a wire rack and let the brownies cool completely in the pan. Once cooled, use a plastic butter knife around the edges to loosen the brownies. Place the entire thing on a baking sheet.
Step 3
Mint Layer
Using a stand mixer with a paddle attachment beat butter on medium for two minutes. Add in sugar and milk, beating on medium for three minutes. Add in extract and food coloring and beat on high for another minute.
Frost the brownies and put the baking sheet in the fridge for at least an hour.
Step 4
Chocolate Layer
In a small saucepan, heat chocolate and hardened separated cream to a simmer, stirring until smooth. Pour into a bowl and place into the fridge for two hours. Spread over mint layer and let chill in the refrigerator for at least an hour.
Step 5
Once chilled, cut brownies into squares using a large, sharp knife. Store in the fridge, and Enjoy!
