No Bake Thin Mint Cookies

A delicious chocolate cookie covered in mint flavored chocolate.

  • 16 oz chocolate
  • 24 thin chocolate cookies
  • 2 tsp peppermint extract
  • 1 cup water


  1. Boil 1 cup of water in a microwave safe container. Pour into small bowl and let sit until the chocolate is done processing.
  2. Place chocolate in food processor and blend on medium. Continue to blend until the chocolate goes through these stages: bread crumbs, clumps, ganache, and smooth-fluid chocolate. Scrap down the sides of the food processor a long the way. Remove water from small bowl and dry. Place fluid chocolate in bowl.
  3. Dip cookie into chocolate. Use a fork to make sure all sides are covered. Place on wax paper or silicone baking sheet to dry. Enjoy!

Recipe Notes

Placing the chocolate dipped cookies in the fridge or freezer will help them dry faster.
