Keto Chocolate Chip Cookies

Low carb cookies made with a combination of Swerve Sweeteners. Nice and moist on the inside and crispier on the outside for a perfect treat!

  • 1 1/4 cup almond flour
  • 3 tbsp coconut flour
  • 1/2 cup unsalted butter softened
  • 1/2 cup Brown Swerve
  • 1/4 cup Granular Swerve
  • 1 large egg
  • 1.5 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp xanthan gum
  • 3/4 cup sugar-free dark chocolate chips


  1. Preheat oven to 350 degrees. Grease 1-2 baking sheets (do not use a silicone mat) and set aside.

  2. Using a mixing bowl with a paddle, cream together butter and sugars on low. Add in vanilla.

  3. While the mixture is creaming, place all dry ingredients into a medium bowl. Whisk until thoroughly combined. Set aside. 

  4. Add the egg to the creamed mixture. Mix on low for 15 seconds.

  5. Continue mixing on low, add in half of the flour mixture until combined. Mix in remaining flour mixture. 

  6. Using an ice cream scoop, divide dough into 12-18 balls. Flatten slightly with the back of a spoon. 

  7. Bake for 9-10 minutes, rotating trays halfway through. Let cool completely on baking tray. Enjoy!
