In a medium saucepan, combine the milk and cream over medium heat. Add in Torani; bring mixture to a simmer but do not boil.
In a mixing bowl, whisk eggs and yolks until thick, smooth, and pale yellow; about 1-2 minutes. Add in sugar replacement, salt, and food coloring.
Scoop out 1 cup of the cream mixture. With the mixer on low, slowly add the warmed cream mixture to the egg mixture. thoroughly combine.
Pour remaining egg mixture into cream mixture in the saucepan. Over medium-low heat, cook and frequently stir until the mixture thickens enough to coat the back of a spoon. This will take about 10 minutes. Whisk in peppermint extract.
Transfer mixture to a bowl and let cool completely; 45-60 minutes or overnight.
Pour cooled mixture into your ice cream maker and follow its instructions.
